That corockpot jambalaya recipe looks awesome! Regina and I do something similar. 2 or 3 chicken breasts go into slow cooker. Season w/ Tony Chachere creole seasoning. Add 1 chopped onion, at least 8 oz sliced mushrooms, 1/2 - 1 cup chopped celery, one can diced tomatoes w/ juice, a palm full or more of minced garlic, some more creole seasoning, a cup of water, and cook on low all day. An hour before eating we turn the crock pot on high stir in a couple cups chopped zuchinni and a couple cups frozen or fresh chopped okra. Serve over rice. We all love it!
